January as come and gone far too quickly, so it's time to check in for my progress on the 2025 Hopes and Dreams bingo card. Here are some of the highlights of what's been going on in January.
Well, this is probably the most obvious one. As you can see, we have some posts up here. I originally said one post per week, but I'm going to modify that to 52 posts (minimum) over the course of the year.
That rounds out to the same number of posts, but also allows for life getting in the way when we are out of town, or our schedules are slammed.
Walk 500 Miles
I'm on my way to 500! Currently sitting at 86.5 miles for the month. Not quite the number I wanted to hit this month, so there's room for improvement. Maybe I should add in a walk somewhere not in my neighborhood each month, because I enjoyed the nature walk kiddo and I did at Bluebonnet Swamp.
Read 100 Books
I knew this one would be an attainable goal for me because this is my main hobby. I'm trying to work new ones in to the rotation, but now that I have a house, it will be tough not to spend time on the back patio reading while I soak up some nature.

Complete 30 Side QuestsIn an effort to stay out of the ruts of life, I completed 4 side quests this month.
- Went on a nature walk
- Painted a face on a rock and named it
- Tried a new restaurant
- Drew a picture
I purposely didn't count the ones we went to while in New Orleans, and I still made a significant dent in this one. (Although most of the restaurants we ate at in New Orleans were not new to me, now that I think about it.) Not sure what got me to stop going to my regular spots in January, but I've made significant strides by going to the following "New to Me" restaurants this month:
- Café Petra
- Oh-K Dog
- Roux 61
- Drago’s
- Jasmine's on the Bayou (Thanks, Restaurant Week!)
- Southern Pearl Oyster House (Thanks, Yelp!)
Kiddo loves history and museums, so before heading back home from New Orleans after her choir concert, I got the family tickets to the National World War II Museum. I have been before, but nobody else in my family has.
This museum is extremely well done, and you definitely need more than one day to really see everything. It's chalked full of information and can get pretty emotionally draining. Kiddo and my dad are the kind of people who will read every plaque and watch every side movie, and trust me there are lots!
We got there for when they opened at 9am and left around 2pm, with a break for lunch at one of their restaurants, and we still saw maybe half of the museum. Our highlight was the dog tag you are given where you can follow a person's journey through the war. Kiddo, my dad and I all had soldiers who made it home, while my mom had Bob Hope.
10/10 recommend if you are in New Orleans. We will definitely be making a trip back to finish seeing the 3 buildings we didn't get a chance to see.
12 "Just Me" Adventures
While Kiddo was doing her choir thing in New Orleans, I took some time to explore the area and enjoyed just being by myself. Sometimes I forget how nice it is to just be. To not be in a hurry, and to just sit alone with my thoughts. (But not sit alone too long with them.) I got to enjoy a few coffee shops and bakeries and just staring at the Mississippi River.
Try 6 New Recipes
Started the year off right with these multi-berry blintzes. I have fallen in love with Egglife Wraps, and their website has a good number of recipes where you can use these products in unique ways. I tried these out, and they were pretty good. I don't think I let the sauce get thick enough, so I'll need to work on that for the future. I'd give it a 7/10.
Time to step it up a notch for February!
